My grandma Shirley has made green beans this way as long as I can remember. It’s a special thing my Papa and I have that we split the onion in half and share it. Even when I’m not there, he’ll only eat half.
Rinse the beans and place in a large pot. Add about an inch of water.
Place the peeled onion in the center of the green beans. Drizzle in the oil. Sprinkle in the salt.
Bring to a boil, then turn the heat down to low. Cook with a lid on for 1 hour and 30 minutes.
Remove the lid, turn it up to medium heat and dry out the remaining water.
Make sure the water doesn’t boil out before removing the lid.
