Side dishes don’t get much more simple or scrumptious than these mustard tarragon roasted potatoes! Best of all, they go with just about anything.
Preheat oven to 400ºF and prepare a 9 x 13 baking dish. Add potatoes into dish and set aside.
In a bowl, stir mustard, white wine, olive oil, tarragon and salt. Pour over potatoes and toss together completely to coat potatoes.
Bake for 50 minutes, until potatoes get golden and tender. Take them out and let cool for a minute or so, then serve immediately!
