This orzo is addictive! My husband had three servings and then leftovers the next night. Orzo is the perfect pasta because it’s small and light. The creaminess of the Boursin cheese just magically melts and blends beautifully with the mushrooms and spinach. This recipe is a keeper!
1. In a large pot boil water for the orzo, using the amount of water specified on your package instructions. Meanwhile chop vegetables and add them into a large saute pan with the oil. Heat over medium heat until the spinach wilts and mushrooms release their moisture.
2. Once the orzo is done, add it into the saute pan with the vegetables. Then add the cheese. Mix well, and serve.
