Creamy but chunky potatoes in a butter/parsley sauce then baked off for a delicious side dish!
Preheat oven to 350º. Put potatoes, onions, and garlic into a large pot of salted water. Bring to simmer and cook 10-20 minutes or until potatoes are tender but still firm. Drain and put all back into the pot. Mix with butter, salt, pepper and parsley. Put in an oven-safe baking dish and bake in the oven for 20 minutes.
