Yummy side dish! We’re eating this with our steaks tonight. Would go great with meatloaf, pork chops or roast.
Mix all the ingredients together (except the bacon) and place in a large, greased baking dish. Sprinkle the top with the whole bag of bacon. Bake at 325F for one hour.

These were the favorite of the night.
I made a few changes to the recipe though. I cut the potatoes then roasted them with our favorite seasoning. Once just cooked added the rest of the ingredients with the exception of the mayo, I used 1/2 cup mayo and 1/2 cup heavy cream. My boyfriend likes things a bit spicy so I also added some hot sauce to the mix. I then added a couple of tablespoons of cream to the top for extra creaminess.
I will definitely be making these again.

Wow! I made these last night using colby-jack cheese instead of cheddar….holy cow! AWESOME! My family gobbled them up and my husband said, “It’s official. I’m never going to be skinny when you keeping cooking things as awesome as this!”

I made these with a few tweaks of my own. First of all, I didn’t realize you were supposed to use diced baked potatoes so mine were raw when I made them. I also used uncooked bacon that I chopped. However, my tweak version to make sure everything was cooked was to cover the casserole with foil and bake an hour at 350* and they were delish! So it all worked out in the end. Might even want to bake uncovered the last 10-15 mins to make sure top gets browned, but they were still good.
