Description

My kids call this super simple orzo dish, ” Mini Mac ‘n Cheese”. It’s very simple, easy and good!

Ingredients

  • 3-¾ cups Chicken Broth Or Beef Broth
  • 1 pound Orzo Pasta
  • 1 cup Sharp Cheddar Cheese
  • Salt And Pepper, to taste

Preparation

Bring broth to boil in a large sauce pan. Stir in the orzo pasta and reduce heat to medium low. Let simmer for 9- 11 minutes or until orzo is tender. Remove from heat and stir in the cheese until melted. Stir in salt and pepper. Serve immediately!

* I have made this using each of the broths and it tastes great either way. The beef tends to give this dish a stronger flavor. I have also used a combination of broths with good results.

Super easy to make. Comforting and filling. A great side at dinner or entree with a salad for lunch.

Any kind of cheese would work in this dish and tuna or such could be added to make it more substantial.
