This cheese covered fried corn is great as a relish inside burritos, or just on the side of your favorite Mexican supper!
Heat oil in a skillet over medium high heat. Put the corn into the hot skillet and sprinkle with a bit of salt. Fry salted corn on all sides until golden brown.
Transfer to a medium bowl, stir in mayo, cheese, cilantro, lime juice, as well as chili powder and garlic powder, to taste.
Serve warm beside your favorite Mexican entree or in your favorite burrito!
