Savory mashed sweet potatoes baked and topped with breadcrumbs and cheese!
Boil sweet potatoes in water for about 15 minutes, or until fork tender. Drain sweet potatoes and return to pan.
Preheat oven to 425ºF.
Add butter, cream cheese, half-and-half, salt, black pepper, cayenne pepper, and garlic powder to potatoes and mash until desired consistency. Add more milk or cream cheese if you would like a creamier consistency and taste to see if any additional seasoning is needed.
Place sweet potatoes in baking dish, top with bread crumbs and cheddar cheese.
Bake until cheese melts and becomes bubbly, about 12 to 18 minutes.
