My Grandmother’s recipe, passed down from her mother… This is one of my favorite summertime comfort foods!
This is just so easy, and so good!
1.) Wash and slice the squash and zucchini. Also slice the onion.
2.) Throw them all in a pot. Sprinkle in salt and pepper to taste, along with 3 Tablespoons of the butter. Add water.
3.) Simmer on medium low, covered, for about 20-25 minutes until all veggies are tender.
4.) Put into serving bowl (don’t drain!) and dot with the remaining 1 Tablespoon of butter.
This recipe can be easily adjusted to serve more or less people. At Marverine’s house, this was always served along with cornbread, sliced tomatoes, and fresh garden cantaloupe.
