This is a great dish to take to family gatherings. It is the only way my daughters will eat carrots. This dish looks as good as it tastes!
Slice carrots so that they look like coins. (Slice them a bit thicker than a quarter.) Boil carrots in water till they barely lose their crispness. Do not cook them until they’re soft! Remove from heat, drain, and cool.
Cut one onion into slices and separate the slices into “rings.” Cut one green pepper (optional) into thin slices. Combine vegetables and set aside.
Bring the remaining ingredients to a boil. Boil for approximately 1 minute. Pour hot liquid over the vegetables and cool completely in the fridge.
