Description

This is a fantastic recipe that I remember my grandmother making using a variety of yummy beans. My uncle has had the recipe since my grandmother passed, and just recently gave it to me. I decided to share it with the world, as it is that good! Other than the taste, the great thing about it is that it will keep for weeks in the refrigerator. Made ahead, it works well to take to work, potlucks, or a light snack.

Ingredients

  • 14-½ ounces, weight Canned Green Beans, Rinsed Well
  • 15 ounces, weight Canned Yellow Beans, Rinsed Well
  • 15 ounces, weight Canned Red Kidney Beans, Rinsed Well
  • 15 ounces, weight Canned Garbanzo Beans, Rinsed Well
  • ½ whole Red Onion, Sliced And Separated Into Rings
  • 1 whole Green Pepper, Seeds And Ribs Removed, Chopped Into Chunks
  • ½ cups Cider Or Red Wine Vinegar
  • ½ cups Salad Oil
  • ¾ cups Sugar
  • Pepper To Taste
  • Salt, To Taste (optional)

Preparation

Mix all ingredients together and refrigerate for several hours before using.

Note: this will keep in the refrigerator for weeks. If you don’t need to watch salt too carefully, add a couple of tablespoonfuls of reduced sodium soy sauce, tamari, or Braggs. Sometimes I add a teaspoon of Italian seasoning or a tablespoon or two of lemon juice.

I’ve been hungry for three bean salad and this was just perfect! I added only about 1/2 c. sugar and it tasted just sweet enough. I’ve already eaten a bowl of it, so I’d imagine that it will be even better tomorrow! Thanks :)
