A fabulous Cajun corn dish.
Melt the butter in a sauce pan. Cook bacon separately and allow to cool. Add corn, onions, peppers, and salt to the melted butter. Reduce the heat to medium.
Cook, stirring often, for about 15 minutes or until the vegetables are tender.
Add garlic, tomatoes, green onions, thyme, salt, pepper, and cayenne to your taste.
Cook for another 15 minutes, stirring occasionally.
