This sweet potato side dish will be a big hit for the holidays. It is something my son always requests for Thanksgiving and Christmas dinner.
Preheat the oven to 350 degrees.
Poke some holes in the sweet potatoes with a fork, then put into the preheated oven, and bake till tender (approximately 40-60 minutes depending on the size of the potato). Remove potatoes from oven and cool. After the potatoes have cooled enough to handle, peel the skins and put the potatoes through a ricer to mash. Add the remaining ingredients (except marshmallows) to the potatoes and mix to blend ingredients. Spoon the potato mixture into a buttered oven safe dish and bake for 20 minutes. Take dish out of oven and top potatoes with marshmallows. Then return to oven and bake for about 8 minutes or till marshmallows are puffy and golden brown.
