This version of creamed spinach is rich, delicious, indulgent and… And low fat!
In a large skillet, sauté the garlic in the olive oil over medium heat until softened but not browned.
If using frozen spinach, make sure you squeeze it dry after you thaw it. Add the spinach to the skillet and sauté for a few minutes with the garlic. Add the ricotta, half-and-half and 1 tablespoon of the Parmesan cheese. Season with salt and pepper and heat everything through.
Serve hot and sprinkle the remaining tablespoon of Parmesan on top.
