The Best Loaded Twice Baked Potatoes recipe is a simple make-ahead side dish perfect for any party, potluck, or holiday gathering.
Scrub potatoes and pierce with a fork. Lightly coat with olive oil and salt. Bake at 400°F for about 45 minutes or until cooked and tender.
Once potatoes are cool enough to handle, cut a thin slice off the top of each potato. Scoop out the inside of the potato, leaving a thin shell.
Put scooped-out potato into a bowl and add remaining ingredients. Mash and stir to combine.
