Description

It is a good thing that this tasty zesty bean lime salad is so easy to make because it’ll disappear in no time!

Ingredients

  • 1 can (15 Oz. Size) Black Beans, Drained And Rinsed
  • 1 can (14 Oz. Size) Corn, Drained And Rinsed
  • 1 whole Red Pepper, Diced
  • 1 whole Shallot, Minced (Or Red Onion If Preferred)
  • 2 cloves Garlic, Minced
  • ⅓ cups Fresh Cilantro, Chopped
  • 5 Tablespoons Olive Oil
  • 4 Tablespoons Fresh Lime Juice
  • 1 Tablespoon Sugar
  • 1 teaspoon Lime Zest
  • ¾ teaspoons Sea Salt
  • ¼ teaspoons Cayenne Pepper
  • 1 whole Avocado, Diced (optional)

Preparation

Mix all of the ingredients together in a bowl except the avocado. Cover and refrigerate for a few hours or overnight. If you’re using avocado, add it right before serving. Enjoy!

Delicious – my mom and I made this and ate it with some grilled chicken and it was fantastic. We’ll be making it again this week.

This recipe is wonderful! I made a double batch today for a BBQ tomorrow and put it in the fridge to come together overnight. Just opened the fridge door and the smell is incredible – I had to sneak a spoonful and it’s divine.
