This fresh and quick recipe is a great side dish for a busy summer weeknight.
Slice the zucchini into pieces that are roughly 2 inches long and 1/2 inch thick. Let them dry on some paper towels.
In a large skillet over medium heat, heat the oil and pepper flakes. Mince the garlic. Once the oil is hot add garlic into the pan and saute until translucent. Add the rest of the ingredients (including the zucchini) and stir. Cook for 10 minutes, stirring occasionally, until the zucchini is just tender.
Serve immediately.
