A delicious roasted broccoli that even picky eaters will love!
Preheat oven to 400 degrees.
Line a baking sheet with aluminum foil. Trim the broccoli heads, removing any leaves but leaving long stalks. Put the broccoli stalks on the pan and drizzle with the olive oil. Toss lightly to evenly coat. Squeeze lemon juice over the broccoli. Liberally sprinkle with salt and pepper. Grate cheese directly over the broccoli.
Cook for about 8-10 minutes. Grate a bit more cheese on top of the broccoli after it comes out of the oven.

I really wanted to like this so I would have a way to fix broccoli quickly without adding a lot of calories. Unfortunately, it was still a little tough after about 15 minutes. Perhaps blanching it before baking would improve the texture. The flavor was nice. Will give it another try.
