This month Tammie and I are making some recipes that are a variation of the traditional dishes that are associated with holiday meals. Here in the Carolinas we love sweet potatoes. This is a rich and tasty version of a favorite side dish! Enjoy!
Wash sweet potatoes and cut them into ¾ “ thick slices.
Fill a large pot with water, salt the water generously and bring to a boil. Once boiling add the sweet potatoes and cook them for 15 minutes. Then drain off the water and set the potatoes aside.
Preheat oven to 350 F.
In a small pot bring water, honey, sugar and salt to a boil. Reduce to a simmer and stir for 10 minutes. Remove from the heat, add the last 3 ingredients and stir. Pour the sauce mixture into a 9×13 baking pan or broiler tray. Place the slices of sweet potatoes into the pan in one layer, then turn them over so they are coated with the sauce.
Bake at 350 F for 1 hour turning the potatoes every 10-15 minutes.
