Crispy new potatoes tossed with lemon zest and chives.
1. Preheat the oven to 425 F. Spray a baking sheet with olive oil cooking spray. Dice the potatoes into ½ inch wide, bite-sized pieces.Toss the potatoes with the olive oil and lemon juice.
2. Sprinkle pepper and lemon herb Old Bay seasoning on the potatoes.
3. Bake in the oven until crispy, about 20 minutes, flipping potatoes at the halfway point.
4. While the potatoes are cooking, prepare the seasoning. In a small bowl, mix the lemon zest, chives and salt. When potatoes are finished, remove them from the oven and toss the potatoes with the lemon zest mixture.
