Healthy roasted carrots with a hint of lavender.
Preheat oven to 375ºF. Peel the carrots and slice them lengthwise into quarters, then cut those into half so they’re not too long. Arrange the carrots in a single layer on a baking sheet. Drizzle with olive oil then sprinkle with salt, pepper and lavender. Bake for about 20 minutes, or until tender.
