This is my sister-in-law Kristie’s “crack” corn. Aptly named crack because it is addictive and incredibly easy to make and eat.
In a saute pan (nonstick is best), melt butter. Once butter is melted, add the cream cheese. Stir until cream cheese is almost completely melted into the butter. Add the drained corn and drained jalapenos and cook until cream cheese is completely melted and corn is hot.
Serve as a side with any meal or over warm eggs or toast.

Gigi, you are so welcome! My love for my sister-in-law grew tenfold when she shared this recipe with me. It makes my husband and my dad extremely happy when they see it at meal time.
