Tangy, chilled, and flavorful, this veggie side is great anytime, but especially for the summer!
1. Blanch your asparagus; just do so that it’s not too hard, but still has a great crispness. Set aside.
2. Mix all of the remaining ingredients in a medium mixing bowl. Add fresh ground pepper if you’d like.
3. Pour mixture over the asparagus on a serving dish/tray that won’t drip.
4. Chill for at least an hour (but two is better). Toss before you serve. Enjoy!
