This buttery seasoned potato side dish is perfect for barbecues. My mom always called them special potatoes.
Wash and chop potatoes (leave the skin on) into bite-sized chunks. If you want something that looks fancier, slice into discs with a mandoline or knife.
Dust with seasoned salt and onion or onion powder, then mix until the seasoning is evenly distributed. Place potatoes into a large square of aluminum foil, then dot with 1/4 cup of butter, chopped into small pieces. Fold the foil around the potatoes so it forms a packet. Place packet in the oven and bake at 350 for 1 1/2 hours, or until potatoes are tender. After removing from oven, stir and taste. Add more seasoned salt as needed.
Alternate cooking methods: Cook the potatoes in a microwave-safe dish for 10 minutes, then transfer to foil and pop on the grill to finish for 20 minutes. (If you’re really pressed for time, you can do the whole thing in the microwave in 15 minutes.)
These potatoes double or triple easily and make a great side for any barbecue or meat dish.
