This baked potato dish is perfect for serving at brunch and can be easily thrown together.
Preheat the oven to 350 degrees (F).
Combine the thawed potatoes, sour cream, 1/2 of the cheese, green onions, salt and pepper in a large bowl. Spoon into a 13×9 baking dish and sprinkle the remaining cheese on top. Bake for 45 minutes or until hot and bubbly.
*Prep time does not include thawing the potatoes. I usually take them out of the freezer the night before. If you like more cheese, don’t hesitate to add a little more than the recipe calls for.
