An easy side dish of roasted cauliflower and spicy jalapeño slices.
Preheat toaster oven or oven to 450ºF. Coat a small roasting pan with 1 teaspoon of the oil.
Slice cauliflower into 3/4-inch thick pieces. Place cauliflower pieces and jalapeño slices in a large bowl. Drizzle with remaining oil. Season with salt and pepper. Mix ingredients with your hands to make sure the pieces are coated well with oil.
Arrange cauliflower and jalapeño mixture in a single layer on the prepared pan. Roast for 25–35 minutes until crispy and browned. Carefully flip cauliflower about 20 minutes into cook time to evenly brown both sides.
Serve warm sprinkled with chopped cilantro.
