Slices of summery zucchini coated in a deliciously creamy and smooth sauce made from cream cheese and sour cream. A perfectly simple and delicious side to any summer meal.
Slice the vegetables to about a 1/4 inch thickness.
Heat oil and butter in a skillet over medium heat. Saute onions until softened. Add garlic and zucchini and allow to cook until the zucchini is just beginning to soften (about 5 minutes).
Put dollops of cream cheese into the pan along with the sour cream. Stir until the sauce is completely melted. Season to taste with salt and pepper.
Transfer to a baking dish and sprinkle with Parmesan cheese. Bake at 350ºF for 15 minutes or until bubbly and Parmesan is browned lightly.
