A nice change from traditional potato dishes.
Chop up potatoes into bite-size pieces. Cook in salted boiling water until very soft. Once the potatoes are soft, drain the water off.
In a large skillet, heat oil over medium-high heat. Fry onions in oil until transparent, then remove from heat and add paprika. Pepper to taste.
Don’t ‘mash’, just stir the onions into the potatoes. They will be soft and fall apart.
You may need more salt and pepper; add to taste.
Eat immediately.
