Roasted carmelized carrots with a stick gooey honey balsamic glaze. It will change your opinion of boring carrots!
Preheat oven to 425º. Place carrots in single layer on a lined shallow baking dish and drizzle with olive oil. Sprinkle with salt and pepper. Toss to coat all carrot surfaces. Place in the oven on the top rack and roast, uncovered for about 25 minutes. While roasting the carrots, either heat the balsamic and honey in a small bowl in the microwave or in a small skillet over low heat until the honey melts and mixes together with the vinegar. Brush this mixture over the carrots after 25 minute of roasting and return to the oven for an additional 3-4 minutes.

These are great! I will be doubling the recipe from now on as the two of scarfed them down and were left wanting more. Thank you very much for sharing this recipe.
Anyone think a parsnip or two tossed in would be good?
