Sweet and savory roasted sweet potatoes tossed in a honey and cinnamon glaze and then topped with melted butter and cinnamon.
Preheat oven to 400 F. Line a rimmed baking sheet with aluminium foil and spray with cooking spray. Set aside.
In a large bowl, add potatoes and onions; set aside.
In a small bowl, whisk together, olive oil, honey and cinnamon. Pour over the potato and onion mixture. Mix together well—I used my hands.
Spread potato mixture onto prepared baking sheet and season with salt and pepper. If you want you can also give a small sprinkle of cinnamon. Place in the oven for 15 minutes then flip the potatoes and cook for another 15 minutes or until fork tender. Remove from oven.
In a microwave safe bowl, add the topping ingredients. Place in the microwave and heat for 15 seconds or until melted.
Pour potatoes in a bowl and stir in the cranberries and top with melted butter mixture. Serve immediately.
