Nothing like fried potatoes! Two separate dunks in the oil is what makes these homefries special.
Heat a deep fat fryer or 2 inches of oil (vegetable, canola, peanut, your preference) to 325 degrees. Add cubed potatoes to the hot oil and cook them for 3 minutes. Drain the potatoes in a single layer on a sheet tray lined with paper towels for a half hour. Raise the heat of the oil to 375 degrees. Add the partially cooked potatoes and the diced onion to the hot oil. Cook for 5 minutes or until the potatoes are a nice golden brown. Drain the potatoes and toss them with the salt, pepper and paprika. Serve hot.
