Herbaceous mashed potatoes. You won’t miss the cream and butter with this flavor!
Place the potatoes in a medium-large pot and cover with cold water. Bring to a boil and cook until fork tender.
While the potatoes are boiling, chop the herbs.
Once the potatoes are cooked, drain the water, place potatoes back in same pan. Add milk, butter, herbs, salt, and smash with a potato smasher or end of a wooden spoon. Stir everything together until combined.
Sprinkle with cheese and serve.
