Description

When made right, these Swedish-style potatoes are crispy on the outside, nice and creamy on the inside. A perfect accompaniment to a nice steak or meatloaf. Or eaten entirely on their own, whichever you prefer.

Ingredients

  • 4 whole Potatoes
  • ½ cups Unseasoned Breadcrumbs
  • ¼ cups Grated Parmesan Cheese
  • ¼ cups Olive Oil Or Melted Butter
  • 1 teaspoon Salt
  • ½ teaspoons Pepper

Preparation

First, preheat your oven to 450-degrees.

Stir the breadcrumbs, Parmesan cheese, and any other seasoning you prefer together on a small plate or bowl.

Then, scrub and peel your potatoes.

Next, slice them thinly and nearly to the bottom of the potato so that they fan out like an accordion. In this version I have created, I sliced each potato in half horizontally before slicing them into accordions. You can do it whichever way you prefer.

An easy way to make sure you don’t slice through the entire potato is to take wooden skewers or chopsticks and line them up on each side of the potato. That way the knife stops before slicing through the potato.

Next, brush them with olive oil or melted butter.

Roll them in your breadcrumb mixture.

Place on a well-oiled baking dish or baking pan.

Sprinkle with salt and pepper, then wrap the baking pan tightly with foil.

Bake for about 30-minutes at 450 degrees.

After 30 minutes, take the foil off and bake for another 15 minutes or so, until the potatoes are nice and crispy on the outside.
