A great healthful way to eat up that zucchini that you have growing in your garden! Eat as a side dish, appetizer or a snack.
Take your prosciutto (I like to get it sliced thin at the deli, instead of using the pre-packaged), and slice each piece down the middle, so you have have two long thin pieces per slice.
Cut your zucchini into sticks, leaving the skin on.
Wrap each zucchini stick in the center with a piece of prosciutto (see photo). It might overlap a couple of times. You can use a toothpick to help secure it, but I don’t. They don’t have to look perfect. Rustic is “in.”
You can do these on an outdoor grill, but I think they are easier on my indoor grill pan. Spray the pan first with non-stick cooking spray and heat over medium high heat. Grill the zucchini sticks on each side for about 2 to 3 minutes, or until the prosciutto is crisp and the zucchini softened. Drizzle with a small amount of balsamic vinegar and sprinkle with coarse salt and pepper.
This is a great appetizer, or even a side dish for any dinner. My family loves anything with prosciutto, so this is a great way to get them to eat zucchini too!
