Easy, quick and tasty. Great for outdoor grilling or indoor baking. Make as much or as little as needed.
Use medium or large squash. Slice lengthwise and hollow out the seeds, leaving about a half cup hole. Sprinkle squash with salt and black pepper to taste. Fill the hole with minced onion and top with shredded cheese. Wrap in aluminum foil and place on a grill (around 350 degrees) for about 20 minutes or until soft (follow the same instructions for oven baking). A wonderful side for grilled chicken or steak. Make as many as you want or have squash to get rid of.
