Grilled artichokes make an amazing side dish to any meal. The grilling gives them an amazing charred flavor!
Trim the tip off the top of the artichokes. Using kitchen shears, snip the pointy ends off the leaves on each artichoke. Using a sharp knife, cut each artichoke in half, lengthwise. Use a spoon to remove the furry interior area.
Bring about 2 cups of water to a boil in a medium size pot (only enough to reach halfway up the artichokes). Add half of the lemon juice to the boiling water. Once boiling, add artichokes (cut side up) into the water. The water should cover about half the artichoke; it should not be fully submerged. Cover and boil for about 15 minutes, until artichokes are tender but not cooked all the way through.
Remove from water and place on cutting board, cut side up. Drizzle with olive oil, salt and pepper. Place on hot grill, cut side down, for 8 minutes.
Remove from grill, squeeze remaining lemon juice over each artichoke, and enjoy!
