A yummy side dish from my childhood which complements a roast chicken really well!
In a large pot over medium-high heat, add bacon, cooking and stirring frequently, about 5 minutes. Add in the onions cooking until the bacon is crisp; stir continuously. Add in the quartered potatoes, the green beans and enough water to de-glaze the pot and barely cover the veggies. Bring to a boil, cover and reduce heat, simmering 15-20 minutes until potatoes are tender. Season with fresh cracked black pepper and sea salt to taste if desired.
