I refused to eat green beans until I tried these. Yummy sautéed green beans, almonds and mushrooms and just about whatever else you might want to throw in!
Take two cups or about two handfuls (or what looks like about two servings) of fresh, already trimmed, washed green beans. Throw into a heated skillet. Put about a tablespoon or two of butter, 1 cup of mushrooms and the sliced almonds. Sauté until it is browning nicely and the green beans are cooking well. Throw in some minced garlic and pinch of salt. If you throw the garlic in at the beginning it will probably burn by the time it is done. This all took maybe 20 minutes. It was a really quick dish!
Be careful not to overcook your green beans because then you lose some of the crunch that is so good when they are fresh. Feel free to add whatever else you would like. Onions also make a great addition. Substitute fat-free butter and other healthier ingredients if necessary.

This was really yum! I used olive oil instead of butter, and omitted the garlic. I served it on a bed of watercress and rocket – it was delicious and just as good cold the next day!
