Not sure why this is called Greek green beans other than that I received it from a Greek chef a few years ago! We have been making it ever since.
1. Fry bacon until crisp, drain on paper towels. Pour bacon drippings into a large skillet or pot.
2. Add 1 – 2 tablespoons olive oil to bacon drippings. Saute onion until translucent. Add chopped garlic and saute, taking care not to burn the garlic.
3. Chop bacon and add to the onion/garlic mixture. Add chicken base and pour in the green beans. Add crushed and diced tomatoes. If you feel you need more liquid, add juice from the canned green beans until you achieve the desired consistency.
4. Simmer on the stove top for 45 – 60 minutes. The longer this cooks, the better!
