These crunchy salted cucumbers are amazing—a crisp crunchy cucumber with a sweet, salty and tangy sauce. It’s a must-have in my home every holiday!
Peel cucumbers. Slice cucumbers in rounds. Salt cucumbers generously on both sides for 1 hour. Rinse cucumbers. Pat dry.
Mix mayonnaise, sugar and vinegar thoroughly (I use the wire whisk on my KitchenAid). Do not use fat-free or lower fat—it doesn’t taste the same.
Pour over cucumbers. Let sit overnight.

My Grandmother made these during the Summer. And I loved them. Thanks for reminding me of a childhood treat.
