This recipe was one of my great grandma’s favorites. All the women in my family have received raves when they take this to potlucks–hopefully you will too!
Preheat oven to 375 degrees. Grease one 9×9 glass casserole dish.
Layer one can of creamed corn, 1/2 can of regular corn, 1/2 of the onions, and enough crackers to cover the other ingredients. Salt & Pepper to taste.
Repeat the layer.
Whisk the evaporated milk and the egg until they’re well combined. Pour the mixture over the casserole until the liquid comes up 3/4 of the way to the top of the layers. (Don’t worry if, like me, you accidentally pour almost all of the mixture in–it just makes the casserole a little more moist)
Dot the top of the casserole with butter or margarine.
Bake uncovered for 1 hour and serve warm!
Note: You can easily increase this by adding another layer–cook time stays the same!
