Super easy and no baking.
Boil pasta according to package directions. (Use as little or as much as needed to feed your crew.)
Drain pasta well and return to pot.
Pour in milk (about 1/4 of a cup of milk for every 2 cups of dried pasta)
Add in cubed cheese – as little or as much as you like based on how cheesy you want it and how much pasta used.
Heat over low, low heat, stirring very often to prevent sticking, until all cheese is melted.
Salt and pepper to taste.
I have yet to find a baked macaroni and cheese recipe that I like. However, I grew up on this and got spoiled. I’ve made baked mac ‘n cheese and just don’t understand why anyone would go to all that effort for such a simple dish.
This recipe can be “dressed up” easily. You can add a variety of items at various points during the boiling process. Broccoli, mixed frozen veggies. whatever your little heart desires. You can also add color by throwing in some well drained pimentos, after complete. Try adding Ro-Tel instead of milk.
Want a creamier version? Add Cream of Chicken soup as well as milk.
Want to make a full meal of it – Add seasoned browned ground beef (taco seasoning is yummy) along with the mixed veggies.

This is my kids favorite mac & cheese recipe. I use butter and half & half. I sometimes add cheese to the top and bake it. Yummy.

Very easy and quick to make. I added the frozen veggies and taco meat.

Very easy to make and very tasty. Lots of pepper was added to give it some edge but this will be made from now on. And it’s cheaper than the stuff in the box!
