My grandma used to make baked sweet potatoes. This is my adapted version of them!
Wash and clean the sweet potatoes. Wrap them in aluminum foil. Bake in the oven for 60 minutes (like a baked potato!) at 350 degrees.
Pour lemon juice over sliced bananas to prevent them from discolouring. Melt the butter in a frying pan. Add sugar, salt and ginger. Add cubed pineapple and sliced bananas and fry in the syrup till lightly browned. Add cream and stir through. Set aside.
Remove foil and cut sweet potatoes in half. Pour fruit and syrup mixture over the sweet potatoes.
Serve with roast meat.
