These sweet and tangy carrots are a delicious accompaniment to any meal. I developed this recipe years ago to get my kids to eat their carrots…and they did!
Cook carrots according to package directions; drain and place in serving bowl. Set aside.
In a small bowl, whisk together melted butter, brown sugar, Dijon mustard and ginger.
Pour butter sauce over hot carrots and toss to coat. Serve immediately. Makes 4-6 servings.
*Brown sugar substitute (Splenda) may be used instead of regular brown sugar.

I cooked these for Sunday lunch and they were delicious and different. They were easy too!

I made this to go with dinner tonight and it was really good and easy to make. Even my husband commented on how great the carrots were (and he doesn’t usually like vegetables)!
