This is my Oma’s recipe from the old country. Goes great with my Wiener Schnitzel recipe.
Wash spinach and steam together with the onion for 5 to 10 minutes.
Finely chop cooked spinach and onion together with the garlic and place in a medium pot.
Combine flour and oil and and heat in a small sauce pan
until golden brown.
Combine flour mixture with spinach, stirring until evenly blended.
Add 1/2 cup of the milk to the spinach, stirring to combine with the flour mixture.
Bring to a boil over medium heat, then reduce heat and simmer for 30 minutes or until spinach thickens. Adjust the thickness to your liking by adding the remaining 1/2 cup of milk. Salt to taste.
After serving dust with a little bit of nutmeg.

This was really delicious when completed with the nutmeg! I think another interesting twist would be to use some bacon grease with the oil and skip the nutmeg part. I will be making this again for sure! Thanks..

This spinach was great, I will make it agian! My sixteen year old doesn’t even like spinach and he loved it.
