Description

A wonderful winter side dish, use any firm winter squash!

Ingredients

  • 2 Tablespoons Minced Fresh Parsley
  • 2 Tablespoons Olive Oil
  • 2 cloves Minced Garlic
  • 1 teaspoon Salt
  • ½ teaspoons Fresh Ground Pepper
  • 2 pounds Winter Squash, Peeled And Cubed
  • ⅓ cups Shaved Parmesan

Preparation

In a large bowl combine parsley, oil, garlic, salt and pepper. Add squash and toss to coat. Transfer to an ungreased shallow baking dish. Bake at 400 degrees for 50-55 minutes, until squash is very tender. Top with Parmesan.

So delicious and easy! A few slight alterations–we used a bit more garlic than called for, added nearly half a stick of butter, and melted a bit of brie on top of each serving. Yum!
