Fresh carrots oven-roasted with olive oil and herbs.
Preheat oven to 400ºF.
Peel and dice carrots into 1- inch pieces. Place into a large bowl. Add oil, garlic, and seasonings to carrots and mix to coat carrots.
Spread carrots in a single layer onto a greased baking dish. Bake for 35–45 minutes.
