If you need a low carb alternative to your favorite potato dish, this Garlic Parmesan Duchess Cauliflower is going to be your new lifesaver!
Preheat oven to 425ºF.
Steam cauliflower and garlic for 10–12 minutes until fork tender.
Place steamed cauliflower, garlic, milk, Parmesan, butter, salt and pepper, and egg yolks in the bowl of a food processor or blender and puree until smooth.
Transfer the mixture to a piping bag or resealable bag fitted with a star piping tip. Pipe onto a parchment- or Silpat-lined baking sheet. Bake for 25 minutes until set and golden brown.
