A garnish that will make every dish better!
Be extra careful when frying up your leeks, as the hot oil can easily burn you.
Clean leaks and slice the white part into 1/4 to 1/2 inch pieces. Cut each slice in half and loosen the rings from each other. Set aside for a moment.
Heat about 1 inch of oil in a heavy pan over high heat. Place leeks into the hot oil (I test one first to see if it starts to sizzle quickly—if so, your oil is hot enough), and cook for about 4 to 6 minutes or until they start to turn brown. Remove from oil and place on paper towel lined plate.
