Frico con Patate (Potato and Montasio Cheese Fry): A specialty of Friuli Venezia Giulia.
1. Spray a medium size frying pan with cooking spray. Add butter and melt over medium heat. Add onions, reduce heat to low and saute until translucent. Stirring as necessary.
2. Add the potato slices and stir to combine. Add broth and cook until the stock is absorbed and potatoes are tender. If potatoes are not tender when the stock is getting low, add more if necessary. Top with cheese, cover and allow to brown.
3. Transfer to a serving plate and serve warm.
